Squid is a tasty main ingredient. The operation that may appear to be more complex is cleaning; but you can have that done by your fishmonger.
In reality the recipe is very simple, fast thanks to a 15-20 minute baking in the oven and the result is healthy and tasty. A recipe that you will not forget!
- 600 g of large squids (about 5-6)
- 200 g of cherry tomatoes
- the peel of 1/2 lemon
- bread crumbs
- fresh parsley
- dried oregano
- 1 slice of garlic
- extra virgin olive oil
HOW TO PREPARE
1. Wash the squid under running water. Clean them carefully by pulling the head and depriving them of the gladius (the cartilage slug that is inside the mantle). Remove the entrails, the tail and rinse very well. Remove the skin by making a small incision. Cut into rings and put in a bowl with oil, chopped parsley, oregano, salt and pepper.
2. Add the halved cherry tomatoes, the grated lemon peel, the minced garlic, the breadcrumbs and mix everything. Make sure that all squid rings are covered in breadcrumbs. When you are ready from mixing the ingredients, all you need to do next is to season with salt and pepper.
