We propose calamari with potatoes and chard, an easy recipe to make an appetising second course that successfully combines ingredients of sea and land. It is a delicious soup made with stewed calamari, with chunks of potatoes and chard, excellent to eat warm. And try to prepare it a day early, then warm it up just to serve it!
• 500 g of clean calamari
• 200 g of chard
• 4 medium-sized potatoes
• 1/2 glass of dry white wine
• 2 cloves of garlic
HOW TO PREPARE
Start cutting the calamari and the chard into strips. Also cut the peeled potatoes into regular wedges. Heat 4 or 5 tablespoons of oil in a saucepan and brown the garlic. Remove it and place the potatoes in the bowl. Mix well, brown them and after about ten minutes add the calamari.
Add salt, let it flavour well over high heat, then sprinkle the wine, and make it evaporate.
Lower the heat, add a glass of water, cover and cook for twenty to twenty-five minutes.
Add the chard, mix well and add a pinch of pepper. Sprinkle with oregano and chopped parsley and cook for another five minutes.
Remove from the heat and let the calamari cool with potatoes and chard before serving.
