The zucchini rolls are a tasty appetizer made with slices of grilled zucchini stuffed with eggs, tuna, parsley and Parmesan cheese. They are tasty and easy to prepare. Zucchini rolls are cooked in the oven, they are light and suitable for everyone. You can prepare them in advance and cook them just before serving them.

- Wash and dry the courgettes. Peel and cut 3 into slices some 3-4 mm thick, reduce instead the fourth in cubes. Grill the slices, saute the cubes in a pan with a little oil and a pinch of salt.
- Collect the fried zucchini which are now cold in a bowl, mash them with a fork along with the drained tuna. Add the egg, parmesan and breadcrumbs. Season with salt and pepper.
- Add minced parsley or mint. Stuff each grilled slice with a little bit of stuffing, then roll it up to form the roll. Spread the courgette rolls in a lightly greased baking dish and sprinkle them with a little breadcrumbs.
- Cook the courgette rolls at 200 degrees for about 20 minutes. Serve warm or at room temperature.
