Personally we are not fans of eating pork and so this is not our favourite soup, but nonetheless, it is an excellent tasting dish for those wintry cold days. The main vegetables in this soup are pumpkin and cabbage. A great combination!

A pork soup with the vegetable focus on pumpkin and cabbage – a great combination. You can add in a bit of rosemary too! As with any other recipe, there are variations coming from traditions carried on from families. It would be great to know what you do differently! So here it goes… (recipe also available in Maltese)

INGREDIENTS

  • 1 onion diced
  • 2 cloves garlic crushed
  • 600 grams pork shoulder or any other fatty cuts of pork meat
  • 400 grams sausages sliced
  • 2 celery sticks diced
  • 2 carrots diced
  • 1 turnip diced
  • 500 grams cabbage chopped
  • 1 tomato chopped
  • 1 teaspoon coriander seeds lightly crushed
  • 1 teaspoon dried or fresh rosemary
  • 1 tablespoon tomato paste
  • 2 medium potatoes chopped
  • 2 litres boiled water
  • 1 tablespoon vegetable stock
  • 1 small bunch parsley chopped to serve
  • Olive oil for frying

METHOD

  • Fry the onion for 5 minutes on medium heat with olive oil until softened in a large soup pot.
  • Add in the garlic, pork and sausages and fry for a further five minutes until browned.
  • Add all other ingredients except the stock and water. Fry for a few minutes.
  • Add in the water and stock and bring to a boil.
  • Reduce to a slow simmer and leave on the stove top for 3 hours.
  • Add in the parsley and serve!

  • 600 gramma spalla tal-majjal jew kwalunkwe qatgħat xaħmija oħra tal-laħam tal-majjal
  • 400 gramma zalzett imqatta
  • 2 zkuk tal-karfus (dadi)
  • 2 karrotti (dadi)
  • 1 ġidra (dadi)
  • 500 gramma kaboċċi 
  • 1 tadama
  • 1 kuċċarina żerriegħa tal-kosbor 
  • 1 kuċċarina klin
  • 1 mgħarfa kunserva
  • 2 patatiet imdaqqsin 
  • 2 litri misħun
  • 1 mgħarfa stokk tal-ħaxix
  • Ponn tursin
  • Żejt taż-żebbuġa

METODU

  • Qalli l-basla fiż-żejt taż-żebbuġa ġo borma mdaqqsa sakemm issir trasparenti u tirtab.
  • Żid it-tewm, il-majjal u z-zalzett. 
  • Kompli qalli kollox għal ftit minuti oħra sakemm tara li l-laħam qed jieħu l-kulur. 
  • Żid l-ingredjenti l-oħra kollha minbarra l-ilma u l-istokk. Kompli qalli għal ftit minuti oħra. 
  • Żid l-ilma u l-istokk, u ħallih sakemm jagħli. 
  • Naqqas in-nar u ħallih itektek għal madwar 3 sigħat.
  • Aqleb fil-platt, żid ftit tursin fil-wiċċ u servi!
