Sneak a few extra veggies into lunchboxes with these simple-to-make, kid-friendly mini eggplant pizzas.

INGREDIENTS

  • 1 eggplant
  • 1/2 cup (60g) shredded pizza cheese
  • 100g mixed medley tomatoes, sliced

METHOD

  • Preheat oven to 200°C. Line a baking tray with baking paper.
  • Cut the eggplant crossways into 1cm-thick slices. Place on the lined tray. Spray with olive oil spray.
  • Top the eggplant slices with cheese and tomato. Bake for 10 mins or until the cheese melts and is golden brown.
