Pasta with sea urchins… if you have never tasted it, you are missing out on a dish that captures the taste of the Mediterranean sea.

It is easy to make once that you have collected the sea urchins or bought them… taken away the roe from the sea urchin, and is a fantastic summer dish to share with friends and a good bottle of chilled white wine!

spaghetti sea urchinINGREDIENTS (INGREDJENTI):

  • 400g pasta (400 gramma għaġin)
  • 40g sea urchin roe (40 gramma laħam tar-rizzi)
  • A spoon or two of chopped parsley (mgħarfa jew tnejn tursin)
  • 2 medium sized chopped onions (2 basliet imdaqqsin)
  • 2 medium sized peeled and chopped tomatoes (2 tadamiet imdaqqsin, imqaxxra u imqatta’)
  • 2 cloves of minced garlic (2 sinniet tewm imqatta’ fin)
  • 2 ½ spoon of lemon juice (1 mgħaref u nofs lumi magħsur)
  • Salt and pepper (melħ u bżar)
  • 5 spoons of olive oil (5 mgħaref żejt taż-żebbuġa)

METHOD (METODU):

  • Get the sea urchins, and remove the liquid inside, putting away the black pieces from inside and what you have left will be orange roe. Aqbad ir-rizzi, iftaħhom u neħħi l-ilma ta’ ġewwa. Warrab il-biċċiet is-suwed u neħħi l-biċċiet oranġjo li hu l-laħam tar-rizza.
  • Scoop them out, trying to leave them whole and put aside in a small bowl. Il-biċċiet oranġjo prova ħallihom sħaħ u poġġihom ġo skutella żgħira.
  • Place the olive oil in a pan and heat at low temperature. Ġo taġen saħħan iż-żejt taż-żebbuġa fuq nar baxx. 
  • Cook the onions and garlic. Qalli l-basal u t-tewm.
  • Now, add the tomatoes and parsley , salt and pepper and stir well. Wara żid it-tadam, it-tursin, il-bżar u melħ; u ħawwad sew.
  • In the end add the sea urchin roe, pour the lemon juice and continue merging the sauce together. Fl-aħħar żid il-laħam tar-rizzi, żid il-meraq tal-lumija u ħawwad kollox. 
  • In the meantime, boil the pasta al dente. Sa dan it-tant għalli l-għaġin.
  • Sieve the pasta and add it to the sauce before serving. Ħawwad sew l-għaġin maz-zalza qabel isservi.
