These Pork Roll-Ups, are tender thin (but not too thin) slices of pork rolled with shredded spinach and a slice of a mild to medium cheese. Dredged lightly in flour and cooked in olive oil they are an amazing accompaniment to a simple sauteed vegetable or salad.

Pork Involtini

INGREDIENTS (INGREDJENTI)

  • 5 slices pork (5 biċċiet laħam tal-majjal)
  • 1 cup chopped spinach 20 grams (20 gramma spiaċi mqatta’)
  • 5 slices cheese mild – medium cheese (5 slajsis ġobon)
  • 1/2 cup flour 65 grams (65 gramma dqiq)
  • salt (melħ)
  • 2 tablespoons olive oil (2 imgħaref żejt taż-żebbuġa)
  • 1/4 cup white wine 59 grams (59 gramma imbid abjad)
  • toothpicks 

METHOD (METODU)

  • On a clean flat surface place 1 slice of pork, sprinkle with a little salt, top a slice of cheese and some chopped spinach, roll meat up and secure with a toothpick or two. Continue till all meat is rolled. (Aqbad slajs laħam tal-majjal u roxxlu ftit melħ, poġġi slajs ġobon u ftit spinaċi fuqu, irrombla l-laħam u agħlqu bit-toothpick)
  • In a small plate add flour, dredge roll-ups in the flour one at a time. (Fuq platt żgħir żid id-dqiq, wara għaddi l-braġjoli rrumblati lesti fid-dqiq wieħed wieħed)
  • In a medium to large frying pan add olive oil, over low-medium heat, heat until oil is hot but not sizzling add roll-ups. (Ġo taġen imdaqqas bi ftit żejt taż-żebbuġa, fuq nar medju, itfa’ l-braġjoli. Iż-żejt ma jridx ikun ifexfex.)
  • Cook covered on medium heat for 5 minutes (or until browned) turn the roll-ups over and repeat cooking covered for 5 minutes. (Sajjar fuq nar medju għal madwar 5 minuti jew sakemm jieħdu l-kulur, dawwarhom fuq in-naħa l-oħra u kompli sajjar għal 5 minuti oħra)
  • Add white wine raise heat and cook covered till thickened, approximately another 5 – 10 minutes. Serve immediately. (Żid l-imbid abjad filwaqt li żżid il-fjamma, u sajjar sakemm jgħaqad. Servi mill-ewwel.)
