Quiche what a passion! And this smoked salmon quiche so incredibly easy to make and is a real treat. Rich, tasty recipe that will become a favourite!
INGREDIENTS
• 250 g of brisée pastry
• 150 g of gruyere cheese
• 4 eggs
• 3 slices of smoked salmon
• 250 ml of fresh cream
• salt
• black pepper

HOW TO PREPARE

Roll out the pastry to a thickness of about 4mm and place it on a tart mold. Place a sheet of parchment paper on top, fill with dried legumes or with ceramic marbles and cook for 15 minutes in a preheated oven at 160°. When the shell is cooked, remove the paper and weights.

Whisk the eggs with the cream, salt and freshly ground pepper in a bowl.

Place the slices of salmon on the brisée shell and spread the grated Gruyere cheese over them. Then pour the egg and cream mixture evenly over everything. Transfer to the oven at 180° and cook for 45 minutes, until the filling is puffed and golden.
