In Malta rabbit is commonly served as a dish, most popularly fried (sometimes with spaghetti with tomato sauce and peas) or as a stew (Stuffat Tal-Fenek).

INGREDIENTS (INGREDJENTI):

  • Whole rabbit cut into pieces (fenek sħiħ imqatta’)
  • 5 cloves garlic sliced thinly (5 sinniet tewm imqattgħin irqaq)
  • 2 tbs all spice (2 mgħaref all spice)
  • 2 tbs worcestershire sauce (2 mgħaref worcestershire sauce)
  • 2 tbs tomato paste (2 mgħaref kunserva)
  • Salt and pepper (melħ u bżar)
  • 4 onions chopped (4 basliet imqatta’)
  • 2 carrots (2 karrottiet)
  • 1 large celery stick sliced (1 karfusa mqatta’)
  • 1 can chopped tomato (1 bott tadam imqatta’)
  • 5 bay leaves (5 werqiet tar-rand)
  • 1 tbs oregano (1 kuċċarina origano)
  • 500 ml water (500ml ilma)
  • 10 small peeled potatoes (10 patatiet żgħar imqaxxra)
  • Half a lemon cut into three pieces (nofs lumija imqatta’ fi 3 biċċiet)
  • ½ cup red wine (nofs kikkra inbid aħmar)
  • 2 tbs fresh chopped mint (2 kuċċarini minta mqatta’)
  • 1 cup peas (1 kikkra piżelli)
  • Olive oil for frying (Żejt taż-żebbuġa għall-qali)

METHOD (METODU):

  • Sprinkle all spice, salt and pepper, and worcestershire sauce onto the rabbit pieces. Iksi l-biċċiet tal-fenek bl-all spice, bżar u melħ, u l-worcestershire sauce.
  • Fry rabbit pieces until well browned in a deep frying pan and set aside. Aqli l-biċċiet tal-fenek ġo taġen sakemm jieħdu l-kulur.
  • In the same pan fry onion and garlic for five minutes until lightly coloured. Ġo l-istess taġen, qalli l-basal u t-tewm għal madwar 5 minuti sakemm jieħdu l-kulur.
  • Add diced carrot, celery and tomato paste and cook for ten minutes. Żid il-karrotti, il-karfus u l-kunserva. Sajjar għal madwar 10 minuti.
  • Add can of chopped tomatoes, oregano and bay leaves and cook on medium heat for a further ten minutes. Żid il-bott tad-tadam imqatta’, origano, weraq tar-rand u sajjar fuq nar medju għal madwar 10 minuti. 
  • Add 500 ml water and rabbit pieces into the frying pan. Żid 500 ml ilma u l-biċċiet tal-fenek fit-taġen.
  • Add potatoes, and wine. Żid il-patata, u l-inbid. Jekk trid tista’ tħokk ftit qoxra tal-lumija. 
  • Bring to the boil and then simmer for 1hr. Ara li jagħli u wara ħallih itektek għal madwar siegħa.
  • Add peas and cook for a further 15 min. Żid il-piżelli u sajjar għal madwar 15-il minuta oħra.
