INGREDIENTS

• 100 g of boiled cannellini beans
• 250 g of natural tofu
• ½ shallot 
• 30 g of black olives 
• 20 g of capers 
• 40 g of mustard 
• tomatoes 
• lettuce
• oil
• salt 
• pepper
• bread of your choice

HOW TO PREPARE

  1. Cook the diced tofu for a few minutes in a pan with the oil and finely chopped shallot. Season with salt and pepper.
  2. Transfer it to a bowl and add the beans, capers, olives, mustard and blend with a blender until creamy.
  3. Stuff the bread you prefer by alternating layers of tofu cream with some salad leaves and sliced ​​tomato.
  4. Garnish with toothpicks and decorate them – if you like – with cherry tomatoes.
