This is a recipe is simple and versatile based on a classic combination: shrimp and zucchini. It is a dish that can be served as an appetiser or a main course.

Shrimp filled zucchini

INGREDIENTS

FOR THE ZUCCHINI: 
• 200 g of shelled shrimp 
• 8 medium zucchini 
• 1 lemon

FOR THE SAUCE: 
• 1 cup of mayonnaise 
• 1 spoon of ketchup 
• Tabasco 
• minced shallot to taste 
• fresh marjoram

HOW TO PREPARE

Boil the courgettes in a little boiled water for about 8 minutes, drain them, let them cool. Boil the shrimp for 3 minutes and let them cool. Prepare the mayonnaise, season with the finely chopped shallot, a few drops of Tabasco and ketchup.

Cut the courgettes in half lengthwise, empty them of the pulp and cut into small boats. Fill them with the shrimp mixed with mayonnaise. Arrange on a serving plate, garnish with strips of lemon peel very thinly cut and leaves of fresh marjoram to taste.
