Pies! We’re in love with them! We’d eat pies everyday if needed be! We don’t know about you but we have been raised up with drinking tea with pies! Strange combination for some but most Maltese will understand it!

Anyhow, here is a recipe for tuna and spinach pie, ideal for lent. Ingredients are enough to serve 6. Recipe is in both English and Maltese…

INGREDIENTS (INGREDJENTI):

  • 500 g puff pastry (500 gramma għaġina tat-torti)
  • 1 large and 1 small tin of tuna fish (2 laned tonn taż-żejt, waħda żgħira u oħra kbira)
  • 2 kilos of fresh spinach (2 kilos spinaċi friska)
  • 6 anchovy fillets (6 filetti tal-inċova)
  • olives chopped and stoned (żebbuġ imqatta’)
  • a handful of cooked peas (ponn piżelli msajjra)
  • 1 large onion, finely chopped (basla kbira mqattgħa rqiq)
  • 4 cloves garlic (4 sinniet tewm)
  • 3 tablespoons capers (3 mgħaref kappar)
  • 4 tablespoons of olive oil (4 mgħaref żejt taż-żebbuġa)
  • fresh mint leaves (weraq tal-minta frisk)
  • 2 tablespoons tomato puree (2 mgħaref kunserva)
  • salt and pepper (bżar u melħ)

METHOD (METODU):

  • Heat some olive oil and toss in the chopped onion and crushed garlic. Saħħan ftit żejt taż-żebbbuġa u qalli l-basal u t-tewm.
  • Throw in all the other ingredients one by one, cook until every vegetable is soft. Waddab l-ingredjenti l-oħra wieħed wieħed u sajjar sakemm il-ħaxix kollu jirtab.
  • There should be no liquids left in the pan. Cool the mixture before proceeding. Fl-aħħar m’għandux ikollok ilma fit-taħlita. Ħalliha tiksaħ.
  • Get the pastry ready by rolling it out and lining it in the bottom of an oven dish. Issa ifrex l-għaġina fid-dixx li se tuża’.
  • Add the cooled off mixture and press it down into the pastry case. Żid it-taħlita fid-dixx u agħtti bil-kumplament tal-għaġina. 
  • Bake the pie at 200° (400°F), or gas mark 6 for about 45 minutes until it’s golden brown. Aħmi fil-forn 200° (400°F), gas mark 6 għal madwar 45 minuta sakemm l-għaġina tiħmar.
