It is a typical Maltese dish made with vegetables and simmered in a pot; but it seems as if it was baked in the oven – that is why it is called Bħal fil-forn.

It is a dish full of flavour. It’s a must to have fresh crusty Maltese bread to mop up the delicious gravy. This is the way we make it at home…

INGREDIENTS (INGREDJENTI):

  • 2 large onions sliced (2 basliet kbar imqattgħin)
  • 8 large potatoes sliced (8 patatiet kbar imqattgħin)
  • 1 large egg plant sliced (brunġiela kbira mqattgħa)
  • 4 large marrows sliced (4 qargħa bagħliet kbar imqattgħin)
  • 2 green peppers sliced (2 bżariet ħodor imqattgħin)
  • sliced tomatoes or polpa (tadam imqattgħa jew bott polpa tat-tadam)
  • olives (żebbuġ)
  • capers (kappar)
  • chopped fresh mint (minta friska mqattgħa)
  • your favourite herbs (ħwawar li tiggosta)
  • 8 cloves garlic sliced (8 sinniet tewm imqattgħa)
  • seasoning (bżar u melħ)

METHOD (METODU):

  • In a large pot heat some oil and fry the sliced onions until soft. Remove half and put on a plate or in a bowl. Ġo borma mdaqqsa itfa’ ftit żejt u aqli l-basal sakemm jirtab. Neħħi nofsu u warrbu fuq platt. 
  • Turn the flame off and start layering your vegetables. Itfi l-fjamma u ibda poġġi l-ħaxix fuq xulxin.
  • Over the onions sprinkle some garlic then place 2 potato layers seasoning and sprinkle garlic between each layer. Fuq il-basal roxx ftit tewm, mbagħad poġġi 2 saffi patata, bżar u melħ u ħwawar skont il-gosti tiegħek. Roxx it-tewm fuq kull saff.
  • Over them place the eggplants, then the marrows, green peppers and tomatoes. Fuq kollox, poġġi l-brunġiel, il-qargħa bagħli, il-bżar aħdar u t-tadam.
  • Some olives and capers, garlic and herbs. Always season with salt and pepper each layer. Poġġi ż-żebbuġ, il-kappar, it-tewm u l-ħwawar. Dejjem roxx il-bżar u l-melħ fuq kull saff.
  • Start again with the remaining fried onions and repeat the former process. Pour a cup of water and put on a high flame until you hear it bubbling then simmer on low heat.   • When you check the potatoes and they are tender and done its ready. Meta tiċċekkja l-ikel u tara li l-patata tkun irtabet, allura l-ikel ikun lest.
